The Sierra Range SR-4B-36G-60 commercial range features four burners, a 36-inch-wide griddle, and two ovens. Its burners are equipped with 12-inch by 12-inch cast iron top grates and deflectors that direct waste into the drip pan beneath the range; once debris is collected, the pan can be removed for quick cleanup. A landing ledge at the range's front promotes safety while providing a stable plating area. Operators can modify the burners' heat levels with the durable, orange-paint-injected aluminum knobs, and for long-term resiliency and resistance to rust and corrosion, its front and sides are stainless steel. A 90,000-BTU griddle integrated on the other side of the cooking surface features a 3⁄4-inch-thick polished carbon steel griddle plate, and for uniform heating, a griddle burner is situated every 12 inches across the plate. To protect nearby cooking areas from popping oil, 3-inch splash guards encase the griddle plate's sides and rear. This component's pilot can be accessed through the front panel, and to ease cleaning after use, its grease trap can be removed. Although the Sierra Range SR-3B-36G-60 range is built with one standard-size oven and one space-saving oven, they both have a 261⁄2-inch standard bakery depth to accommodate similar pans. Both ovens feature double-sided enamel interior tops, bottoms, and sides that withstand repeated heating and cooling and simplify cleaning between uses. Two heavy-duty wire oven racks are included with these units, and the standard oven features three shelf positions. To ease product insertion and retrieval, these ovens are fitted with counterweight-balanced doors.
